I don’t know about you but fall is in the air. The temperatures here have dropped and my garden looks like it. The squash is yellowing and looking sad. Same for the serrano peppers. The tomatoes, which didn’t really start producing until late August seem to have given up. I love the cooler temps, leaving the windows open to let in all that lovely cool air for sleeping.

August 1st I began eating paleo. Dropping the grains and dairy caused me to lose 15 pounds over the month. September has been crazy with the fair but so far have held that loss. This week really starts the livestyle change back to paleo. The nice thing is that I don’t feel deprived at all and Pinterest has some great paleo recipes. I think I’ll try a paleo chili, no beans, which really, is Texas-style chili. I should do that and take pics for my Chicklets in the Kitchen blog. With the Fair in full swing and dealing with the aftermath, I haven’t had time to edit Tested. I’ll pick that up this week. I’m shooting for an October release. The cover designers are working on the cover and I’ll share as soon as I can.

My next public appearance will be at the Pine Fall Festival October 14th and 15th. On both days, I’ll be in the Community Hall with a few other authors selling and signing books with the antique dealers. On Saturday besides crafters, is the annual chili cook-off. Saturday hours are 9am – 5pm and the chili cook-off starts at 11am. Be there at 11am. The chili usually runs out by noon. Buy a ticket, taste the chili, vote for your fav top three! My hubby is usually there with his version. Sunday the hours are 9am – 4pm. Lots of crafters will be there and the weather is lovely in October. Come on by and say hello.

NEW! In November the Payson library is having it first ever mini-comicon. SciFi and Fantasy fans, get ready to head to central Arizona. There’ll be costumes, SciFi and Fantasy panels. I’m excited! I’ll post the date as soon as I have it.

Fair is This Week: Monday Blog Post

People looking at the Photography entries 2016

The fair set up starts this evening. We put up tents to house the exhibits, livestock and entertainment. Everything has to be up by Wednesday as that’s the day we accept exhibits. Thursday evening is the opening. It will be the first time we’ve opened on a Thursday so it’s pretty exciting. There will be bands, dancing, and all sorts of other entertainment the whole three days of the fair. Check us out at www.NorthernGilaCountyFair.com. Tomatoes galore. Saturday night I made a goulash sort of thing with tomatoes, yellow squash (both from my garden!), left over porkchops, onion and well, I don’t remember. I do remember it being very good. Hubby had his over rice! And no, darn it, I didn’t take a picture.

Birthday, Book Festival: Monday Blog Post

Newest News:

Today’s my birthday. I’m far past the point where I do much celebrating of the day though hubby may take me out to dinner. We like two local restaurants for special occasions. The closest to me, right in town, is Fargo’s Steakhouse.  https://www.fargossteakhouse.com/ They have the best osso buco ever. And if you’re more into burgers and fries, the fries are hand cut on the premises and gluten free. There are other gluten free menu items as well. The second place is Diamond Point Shadows Steakhouse.  http://www.diamondpointshadows.com/ This restaurant is a little way out of town but not that far. This is the place where I get lamb chops and for dessert, crème brulee. I don’t know why crème brulee went out of style but Diamond Point still serves it. Yay! What’s your favorite special occasion place?

On the garden front, my garden survived a hail storm Saturday. The yellow squash leaves are ragged but everything is still alive. And in case you were wondering, yes, what was supposed to be a zucchini is, in fact, a yellow squash. I don’t mind, I guess. More yellow squash for me. The peaches are ripening. Another week I think and I’ll be swimming in peaches. I followed a tip to thin the peaches in the spring to get bigger peaches but that didn’t happen. They’re lovely but still small. I’m disappointed.

I’m still waiting for the editor to get Tested back to me. I found a picture of a college building that I liked and have begun creating the cover. I’m stalled though, as the font I used on the previous covers is not on my computer. I replaced the last computer due to power surge. I had the font name listed in my book notes but can’t find the notes for either First Encounter or The Downtrodden. I’ve looked all over the house and can’t find them so now I’m stumped. I’ll keep looking. The files have to be somewhere.

Arroz con Pollo: Chicklets in the Kitchen Post

Arroz con Pollo

Arroz con Pollo (Rice with Chicken)

No pasta this month, it’s rice instead. I saw this recipe on Food Network’s, Farmhouse Rules with Nancy Fuller. An upstate girl myself, I enjoy Nancy’s show and this one was shown around Cinco de Mayo, of course! Anyway, I haven’t made a chicken and rice casserole in I can’t remember when. So while I missed doing it on May 5th, it was shortly thereafter and on a rainy, cold day. I was grateful to have that lovely smell of rice, chicken and saffron filling the house and the heat of the oven making things all warm and cozy.

Serves 4 – 6.

Hardware

Cutting board

Knife

Cast Iron Dutch Oven

 

Ingredients

Ingredients

1/4 c olive oil

12 bone-in, skin on, chicken pieces (I used 6 pieces, thighs and legs)

1 large onion, chopped

1 red bell pepper, chopped

4 cloves of garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon saffron threads

3 bay leaves

1/2 cup diced tomato

4 cups chicken stock

One 12-ounce bottle lager beer

2 cups arborio rice

1 cup frozen peas, thawed

1 pimento, chopped (jarred pimento is fine, about 1/4 cup)

Salt and pepper

 

Heat oven to 350 degrees Fahrenheit.

Brown the chicken

Shrimp Scampi: Chicklets in the Kitchen Post

Shrimp Scampi

I seem to be on roll with the pasta recipes but I don’t care. I love pasta. I was thinking about what to do differently this week for our Saturday pasta night and it occurred to me that I could do a shrimp scampi. Was I watching an Olive Garden commercial at the time? Maybe. Anyway, I looked on the internet and for a fancy dish, shrimp scampi is surprisingly easy to make.

Serves 2 – 4.

Hardware

Large frying pan

Cutting board

Knife

Serving Bowl

Pot for Spaghetti

 

Ingredients

2 Tblsp butter

1 cup shredded parmesan

1 lb shrimp, rinsed and patted dry

2 Tblsp minced garlic

Salt and Pepper to taste

3 Tblsp Lemon juice and the zest of 1 lemon

1/4 cup Pinot Grigio

In a large pot, cook 12oz spaghetti according to package directions.

While the water comes to a boil and you cook the spaghetti, melt the butter in the frying pan. When it begins to foam up, add the shrimp, garlic, salt and pepper. If you’re using raw shrimp, cook about 2 minutes per side. If you’re using already cooked shrimp, just a minute per side to warm it through.

Avocado Pesto: A Chicklets in the Kitchen Post

Avocado Pesto

I was scrolling through the channels the other day and landed on Food Network’s Trisha Yearwood’s show, Trisha’s Southern Kitchen. She had a vegetarian guest on and they were making Avocado Pesto Toast (http://www.foodnetwork.com/recipes/trisha-yearwood/avocado-pesto-toast). I didn’t copy the recipe down and I didn’t go back to look it up when I made this for dinner but my recipe and hers is pretty close.  Next time I’ll remember the lemon. That would be even better.

Why avocado pesto? Some people, my daughter included, find a full basil pesto too much. Basil is a powerful flavor and it can be overwhelming. Cutting down on the basil with avocado (or Swiss Chard, Spinach, Arugula, Asparagus, or some other green) is a really good alternative. The avocado lends the sauce a smooth, rich mouth feel and is good for you too!

The best thing is that this is a no cook sauce and serves 2 – 4.

1 package fresh basil (about 1/2 cup) stems removed

1 cup shredded parmesan

1 4oz package avocado (guacamole that is just avocado) (or 1 whole fresh avocado)

1/2 cup extra virgin olive oil

Salt and Pepper to taste

Lemon juice (2 Tblsp Optional)

In a large pot, cook 12oz spaghetti according to package directions.

Happy April: Monday Blog Post

Newest News:

Last Friday and Saturday hubby and I drove up to Nellis AFB to celebrate the promotion of my nephew to Chief Master Sergeant. We were very proud of his accomplishment and it was nice to see so many of the family. We’re spread all over the U.S. and don’t get together very often. He’s a handsome young man, isn’t he?

April’s Camp NaNo started Saturday and I was on the road all day. So I hand wrote four pages of the next Zoe Ohale story in the car. I’m not sure how many words that is, I still need to type them up. At least I got a few words in. After I finish drafting this blog post (written on Sunday), I’ll have to do that and see what my first day’s shortfall is and work extra hard to catch up.

I bought nine dollars worth of pansies at Walmart last week and put some in my front planter, and the rest in two pots I had in the back yard. Aside from watering, not much gardening though the Swiss Chard was big enough to cut and have with dinner one night last week. I just love going out to the garden and picking my food, bringing it in and cooking it up. Talk about convenience food!

Last week I talked about my Elf Slave story. I have 3 episodes written and it’s not done yet. So that story is going to run into May, at least. I’m not fond of Elf Slave as a title, what else can I call it?

A New Year’s Breakfast: Chicklets In the Kitchen Post

It’s the new year and to be honest, I’ve kind of let my weight get the better of me. That has to stop. It doesn’t feel good at all. So, the first day of the year I decided to change my eating and get some more exercise. I know. Everybody does that. But it’s true. Time for me to make a change. Since I have been suffering from plantar fasciitis and from tendonitis in both feet, doing my usual hiking and aerobic exercise can’t be done. So I went to the local community college where they have a gym and as a senior, I get free membership. I signed up for a trainer to help me develop a training program that allows me to exercise without pounding on my feet, allowing me time for them to heal. Yay! I’ve even scheduled the workouts on the calendar, like appointments. No being wishy-washy. It’s important.

So what’s that got to do with breakfast? It’s the other side of the coin, of course. Good fuel, good workout, happy author. Actually this breakfast hash is so simple I’m almost embarrassed to post it but a lot of people box breakfast up into a tiny space when it could be so much more.

Chicken Scallopini with Mushrooms and Brandy Sauce: Chicklets in the Kitchen Post

Here’s the thing. Aren’t we overwhelmed with food right now? I know, but chicken scallopini is an easy to make, impressive dinner that can be used for any holiday meal and wow your guests. Turkey could most certainly be substituted if you want to use a more traditional holiday protein.

Hardware

2 bowls or pie tins for breading process

Cutting Board

Knife

Cookie sheet with cooling rack

Large frying pan

Preheat oven to 300 degrees F.

 

Ingredients

1/2 pound sliced mushrooms, washed and patted dry

¼ cup diced onion

2 med garlic cloves, minced

Two full chicken breasts, butterflied and cut in half

2 T Olive oil and 2 T butter

2 eggs, whisked and put in one pie plate.

Cup flour, seasoned with salt and pepper.

1 cup chicken broth

1 cup half and half or heavy cream

Salt and pepper to taste

In the large frying pan, add the olive oil and butter, melt. Add the mushrooms. Saute until browned, remove from heat.

Dice the onion and garlic.
