Cilantro-Lime Salmon Over Cauliflower Rice and Peas

It’s Christmas and if you’re reading this on Christmas Day, you’re probably all set to eat your holiday dinner. Whether that’s a standing rib roast, a glazed ham, the feast of the seven fishes or some combination thereof, it’s probably over the top, heavy on the fats and sugars, and enough to put you in a food coma. The day after tomorrow is left overs, of course. But sometime before the final bingeing of New Year’s Eve, you more than likely want something a little lighter. This may be what you’re looking for.

I was watching an episode of The Pioneer Woman and she made a Cilantro-Lime Rice and Salmon dinner. I like salmon, and in my house, we don’t eat fish as much as we should. This recipe sounded perfect. I modified it to be paleo, and this is what I came up with. Feel free to make adjustments to fit your family’s tastes. This is easy and fast to make and very easy to be made to feed 2 people or a big crowd.

Cilantro-Lime Salmon over Cauliflower Rice and Peas feeds 3 with leftovers

Hardware

Cutting Board

Medium Mixing Bowl

1 Large and 1 Medium Frying Pan

Zester

Large Knife

1 Cup Measuring cup

Measuring Spoons

Large Spoon

 

Ingredients

Salmon

2 Limes, zested, juiced

1/2 bunch Cilantro, minced

1 1/2 each 12 oz packages Riced Cauliflower

1 cup frozen Peas

1 cup Gluten Free Soy Sauce

Oil for Cooking (I used Olive Oil)

Salt and Pepper to taste

 

Directions:

  1. Cut salmon into serving size pieces. Salt and pepper both sides. (If you’ve purchased your salmon already portioned, even better!)

Who’s Next: Part 4 – Flash Fiction Friday Post

 

There were riots outside of Congress. People were upset that the Senators and Congressmen and women, all still had insurance. “Why?” People asked. “Why do they get insurance and we don’t? They’re not special. If it’s good enough for them to cut off people with pre-existing conditions from their insurance, why not them?”

The police had to cordon off several blocks out from the congressional buildings and the White House after several men through molotov cocktails at the buildings. Central Washington DC looked like a combat zone there were so many soldiers patrolling.

In the meantime, I had been asking around about making our own insurance company. Several people I knew were willing to invest starter money and pay a monthly premium. I talked to retired insurance agents. They agreed it was a good idea and gave me tips on how to do payouts. A percentage of what each person paid in, was the gist of it. I felt like I was on a runaway horse. Panic filled my waking moments and nightmares filled my nights. The stress was getting to me.

My own premiums for my company were going to run me twice what my old medicine cost. But it would be a buffer for doctor office visit bills and a cushion for any hospitalization. I had to talk to investment bankers. I couldn’t just shove everyone’s premiums into a savings account. That was a whole other level of stress.

In the country as a whole, congresspeople and senators were trying to back up the pre-existing condition legislation. It was impossible. The insurance companies were failing after people stopped paying their bills. Some people had already been to court and the judgements had been for the consumers. The judges called it a breech of contract, even though the insurance company high-priced lawyers argued that there were clauses that said they could terminate policies at any time.

The number of lawsuits reached record highs. The court system was jammed. The President of the United States appeared on television calling for calm and reason. That’s when a protest group cut the power to the station doing the broadcast.

A year later, things had quieted down. My insurance company, Around the Block Insurance, was doing well. People were very careful about making a claim, knowing that they could run out of insurance resources. The FundMe company was making a fortune as people got on, making pages asking for donations. It seemed to be a thing—donating to people who needed medical care. After all, we were all in the same boat.

Congress was working on bills to implement single-payer medical in the United States, similar to what was working in Canada and Europe. All of the nay-sayers were gone—died themselves or finally understanding what the single-payer movement really meant.

I got ready for work. It was casual Friday at the office so I was in a sundress and sandals. My husband kissed me on the cheek on my way to the garage. “Have a good day, tycoon.”

I laughed. My salary was the same as every other person working in my company. That was another thing happening in the country but a whole different story.

“Thanks, hon.” I kissed him back. “Get the pork chops out for dinner, would you? It seems like it will be a nice night to grill.”

“Will do.” He shut the door behind me.

It wasn’t the only problem in the world, but I’d solved, in a small part, at least one.

Paleo Sandwich Bread

We’re headed into the fall and one of the best things is roasted meat. You know—roast chicken, roast beef, roast pork, all the best things about cooler weather. And after the meal, what to do with the left-over meat? Sandwiches of course!

But if you’re on a gluten free or paleo lifestyle like I am, sandwiches are tough. Of course you can do a lettuce wrap. I like those, especially in the summer. But for cold weather, I like something a little heartier. And this bread fills the bill.

If you’re looking for a giant slice of bread, this isn’t going to be it. But taken as is, it’s tasty, holds together well, (especially lightly toasted), and easy to make. So give this a try. You’ll be glad you did.

Story Updates, Getting Healthy, National Novel Writing Month: Monday Blog Post

Newest News:

Last week was a mess for me, how about you? I never did get around to any of my writing projects other than getting Friday’s flash fiction story up. Everything else was consumed by doctor appointments and a trip to Laughlin, Nevada. We do, occasionally, do what hubby likes and take the occasional trip. It was fun, and we took mom. She enjoys the casino too. We had river boat dinner cruise, which was nice. Then some gambling before bed. Then we came home the next day. A very quick trip. I started my paleo again starting yesterday. It was a constant battle to not get into the candy. Bad habit, that. Anyway, had a good breakfast of a hash with veggies and left-over roast chicken thighs. Lunch was a salad, with more chicken. Supper was a chicken chili that hubby made. It had beans in it which are not paleo, but I didn’t want to disappoint him. It was tasty. He got the recipe from the winner of the Pine-Strawberry chili cook-off winner. So, it had to be good. Right? Oh, and I juiced some carrot, orange, lemon and ginger for a shot of anti-inflammatory, and a whole bunch of celery, for a glass of celery juice. It also has great anti-inflammatory properties that as a hypo-thyroid sufferer, I can use. It’s also high in minerals. Good for chasing down the body’s toxins and getting rid of them. National Novel Writing Month, NaNo for short, starts November 1st. I’m prepping to write in my All About Bob series. I have to finish book 3 then write books 4 and 5. If I stay focused, I can do all of that. The stories are meant to be novelette/novella length, so totally do-able. I’m also leading a write-in for my local chapter of the Arizona Professional Writers. This should be a lot of fun and I’m looking forward to it. That’s scheduled for November 21st.

Beets, Calendar, Book Signing: Monday Blog Post

Beets, Ready for the oven

Is there a food or foods your family doesn’t like? At my house, I’m never a fan of lima beans, butter beans or liver. On the other hand, I love beets, and so does my mom. We both love the color, the texture and the flavor. So now that she’s staying with us, I decided one day last week to make beets. I think the best way to deal with fresh beets is to bake them. So, while I’m prepping them for the oven, hubby comes over to the sink where I’m scrubbing them then giving them a nice coat of olive oil before I pop them in the oven.

Hubby: You paid money for those?

Me: Yeah. Beets are great.

Hubby: Well, if you say so.

Obviously, the hubs isn’t a fan of beets. That’s okay. When I took them out of the oven, I cut the tops and roots off and slipped the peels off, then sliced them. Mom and I ate all three of them. Yum.

Gluten’d, Mom: Daily Blog Post

Took Mom out to lunch yesterday to my fav diner.

Three hours later, I’m in the bathroom. Yep, they gluten’d me. It’s a place owned by people with celiac so since it’s opening, has been a favorite spot of mine. But not yesterday. Nope.

Mom is settling in. Yesterday, after lunch, we checked out the local senior center for their programs. Still have to do lots of other “moving” tasks, but one thing at a time.

Welcome Mom, Horror Story, Giveaway : Monday Blog Post

Newest News:

After spending three weeks in upstate NY, the decision was made to bring my mom to Arizona to live. We arrived Saturday night, tired, sore and ready to collapse into bed. Hubby had bought her a bouquet of flowers and put them in her room where she could see them right away. She was very happy but the thank you’s had to wait until Sunday morning when she, and me, were more conscious. Anyway, she’s settled in. There are still a lot of things to arrange but for now she has a TV in her room, a pad to play computer games on, and run of the house.

While in New York, I managed about 18 pages of hand-written horror story. It needs to be transcribed to the computer and completed but at least I have something I don’t hate.

The Gulliver Station box set has some sort of error that’s preventing it from being distro’d to Kobo, iBooks and other places. Now that I’m home, I’ll have some time to repair the error and get it out.

I have my notice to transfer all of my paperback book files from Createspace to Kindle. I’ll try and get that done this week. Other authors have said the process wasn’t hard or very time consuming so I’m crossing my fingers.

Upstate NY in September: Monday Blog Post

 

Adirondack Fall by Randy Cockrell

 

It’s mid-September and while the days are hot and humid, thee trees and plants are starting the process to turn color. I saw a sumac in bright red two days ago. A lone sentinel in its party dress, ready for the fall gala. But the rest are just beginning to lose that fresh green color. All that’s needed is a frost. That could come at any time. It’s not unusual for it to be hot one day and a frost to appear overnight.

For this area, October is the party. Scarlett, orange, yellows of every shade, and bronze are common in the Adirondacks. The days are mild and the nights cold. The drop in humidity leaves the sky a clear sapphire. October sky I’ve always called it. A color and clarity that only October brings. The above picture is from a couple of years ago. A good example.

Mom and I are prepping for her trip to Arizona. Doctors, medical equipment companies, and multiple emails and faxes are involved. Good thing I was a project manager.

So that’s it for now. I managed a flash story for last Friday and with luck, I’ll have one for this coming Friday.

Where Am I?: Monday Blog Post

Where are the daily blog posts, you may ask? Simple. My mom has taken a turn and I flew to upstate New York to work with the rest of my family on her health care. I’ve been busy each day keeping her alert and engaged. That doesn’t leave much room for daily blog posting. I’ve been here a week and even though I have a camera and a camera on my phone, I haven’t taken a single picture. The one above is from a couple of weeks ago.

So that’s it for now. I managed a flash story for last Friday and with luck, I’ll have one for this coming Friday.

Happy Hour: Daily Blog Post

 

Hey!

Saturday was Happy Hour. This is a get together with a lot of other people to enjoy a pot luck, some music and dancing and a glass of wine or two. In previous years it has been held monthly but this year there just weren’t enough volunteers to do that so it was held last night and we had a ton ‘o fun. I did anyway. I’ve been looking forward to this all summer. Picture above.

I managed some work on my Gulliver Station box set on every day but Friday and Saturday and made a lot of progress. Since Saturday have finished formatting the Smashwords edition and updated the Kindle edition. Monday I uploaded both and they should be available to download now.

It’s just 1 week until the Northern Gila County Fair. I love county fairs and hope that if you’re in the area, you can come by and see the fabulous work our local ranchers, farmers, backyard gardeners and crafters do. The horse show was yesterday, the 25th. You can find out more about our fair at www.NGCFair.com.
