Peaches!: Daily Blog Post

Frozen peach slices

Hey!

So I mentioned in Monday’s post that I have an abundance of peaches. Monday morning I made cobbler, which used up 4 cups of chopped peaches. I had some of that for breakfast, yum!

I turned three other containers of peaches into sliced peaches and put them in the freezer. If you also have an abundance of peaches, here’s what to do. Quickly blanch your whole, ripe peaches, about 2 minutes. Drop them into ice water to stop the cooking. Then with a paring knife, peel each peach. If your peaches are truly ripe, the skin will slip right off. If your peaches aren’t fully ripe, you’ll have to actually peel them. Take care to just take the skin and as little of the peach flesh as humanly possible. Then half, pit, and cut into slices. Put them on a freezer-paper lined cookie sheet or sheets, in my case, and put in the freezer. I usually let mine freeze at least 24 hours. Longer if I get busy. Anyway, take from the freezer, loosen from the freezer paper, and put into gallon freezer bags.

Cell Phones Update: Daily Blog Post

Samsung Galazy J7

Hey!

My new, Samsung, Android J7 arrived Saturday! Yay! It came with a charging cord, and I purchased the skin and a car charger to go with the phone. It looks like my Moto 3G with just a couple of small changes in microphone openings, On/off switch and volume buttons. Anyway, I’ve charged it up. Then Sunday morning, I went into the system and yay! They’ve made it easy to transfer contacts and applications and files from the old phone to the new one. All I had to do after that was call Consumer Cellular and have the new phone activated, the phone number transferred and the old phone de-activated.

Cell Phones: Daily Blog Post

Hey!

My whole deal Wednesday was cell phones. I had a phone quite awhile back that I used just for emergencies. It was a dumb phone. All it did was make phone calls. After I started writing and going to events, it became clear that I needed a smart phone. After all, not only did I want to be able to use the Square for taking credit card payments, but I wanted to post to social media about whatever event I was at. That was a, um, three years ago.

Since I’m old, I’m also cheap, er, um, thrifty. I was not going to pay $700 for a phone. I tried using a smart TracPhone and that was fine for a bit but didn’t really meet my needs so about two years ago I went to Consumer Cellular (they use AT&T as their provider), and bought a phone, a Moto 3G. I got it set up, struggled to learn all the stuff the phone could do and all was fine for about a year. Then the sim card filled up. I couldn’t update my apps, including my Square app, which was going to be problem. I futzed around for over a year, trying this, that and the other thing and finally, about three weeks ago the phone started telling me it couldn’t do system updates.

I managed to make it through the Payson Book Festival with the phone operational but Wednesday, I finally went to a local guy, a Verizon seller, and asked for help. What a great guy! I told him what I use the phone for and he did some searching and ended up telling me to go to Amazon or back to Consumer Cellular and buy from them. Right! A wonderful fellow. Anyway, I searched Amazon, and the CC sites and finally called Consumer Cellular. Nice young woman talked to me and I finally sprung for a new (I was considering refurbished) Samsung Android 7. It should arrive Friday. I did not spend $700. I didn’t have to change my service plan. When I get the phone, I’m going to take it and my old phone to my local seller and pay to have him transfer everything over to the new phone. The least I can do, am I right?

So that’s my phone story. I’ll let you know how it goes.

Ice Cream, Concert in the Park: Daily Blog Post

Hey!

So hubby took a handful of hikers on a non-standard day hike today, meaning, we don’t usually do Saturday hikes. However, a hiking friend of ours from Phoenix heard about our Tuesday hike to Potato Lake and wanted to see it. So, he arranged a hike. I didn’t go. I was just there Tuesday and besides, there were things I wanted to do. This blog included.

Anyway, among talking to one of my brothers back east, going to the Farmer’s Market, and watering the garden, I decided to make a paleo ice cream. The base is sitting in the refrigerator right now. Why isn’t it churned and in the freezer? Because while the base of the ice cream maker is in the freezer, where it belongs, I cannot find the paddle or the motor part. Hubby and I have looked everywhere. Even places it shouldn’t be. No motor. No ice cream. Sigh. I can hold the liquid base and go to the store and buy a new ice cream maker, but I’ll have to let that base freeze for 24 hours. No ice cream for me tonight.

Also today is the last concert in the park. The town’s Park and Rec department puts on this concert series every summer and this is the last one for the season. It’s a good band, too, so I don’t want to miss it.

Raspberry Coconut Panna Cotta: A Chicklets in the Kitchen Blog Post

Raspberry Coconut Panna Cotta

It’s summer. It’s hot. The last thing you want to do is start the oven up. The first thing you want is something cool, smooth, slightly sweet, and refreshing. I’ve found just the thing over on www.healingfamilyeats.com/raspberry-coconut-panna-cotta/. As soon as I saw that delightfully pink, creamy-looking dessert, I just had to try it.

Unfortunately, I didn’t have any raspberries. I did have frozen blueberries though, so that’s what I used. This recipe is easy, and has just five ingredients, probably already in your fridge, freezer or pantry. And it makes 8 servings! Yay!

This being a paleo recipe, we’re not using the usual panna cotta ingredients or methods but that’s just fine with me. Give it a try. Click here for the full post.

Newest News:

The Payson Book Festival was Saturday, July 21st, and those of us on the committee are recovering from the activity. We had a great turn out though we’re still counting the numbers. The authors all had a good time talking to everyone who came and we even sold some books. Win! Win! Above is a picture from the event. After the stats are compiled, we meet on August 6th to go over everything from this year, then, BANG! We start planning for 2019. Mark you calendars. The next festival will be July 20th, 2019. www.PaysonBookFestival.org.

I’m picking mostly cherry tomatoes so far, and keeping an eye out for the above pictured fellows, called, Horn Worms. You can see why I pick them off of the plant and send them sailing over the fence into the drainage ditch. And a picture of the whole creature, just in case you find one in your tomatoes.

Next up on my personal schedule is the work on the Northern Gila County Fair. I’m the Exhibits Tent Director and there are 12 departments in my tent. I’m excited about the fair but like the book festival, it’s a huge undertaking. The fair this year is September 5th, 6th and 7th. Banana-Loquat Smoothie: Chicklets in the Kitchen Blog Post

Banana-Loquat Smoothie

So last month I posted a coconut-lemon whip recipe which I made from meyer lemons from my daughter’s back yard tree. She also had, loquats, ripening. A loquat is a cross between a plum and a cumquat. Sweet, yellow, small (1 – 2 inch) oval shaped fruit with anywhere from 1 to 4 fair-sized seeds inside, depending on how big the loquat is.

The loquats are delicious, sweet and succulent. Unfortunately, they don’t travel or keep well so not a commercial fruit as far as I can tell. I was very fortunate, then, to get about a pint of them.

Rather than eat them one by one, I cut them in half, de-seeded them, cut in quarters, and dropped into my blender. This time of year I prefer smoothies for breakfast to juice as with a smoothie you get all of the fiber. Also, I don’t, yet, have a juicer.

Ingredients

1 pint Loquats, cut in half, seeded, then cut into quarters

1 ripe banana, chunks

1 cup Almond Milk (more or less as desired thickness)

Wishing everyone a wonderful Memorial Day. It’s traditional for our American summer season to begin with this weekend. However, let’s take a moment to honor our fallen heroes. After all, they paid for it.

Phoenix Comic Fest is over. I got home last night, exhausted. Today, I feel worn out so after I put all of my expenses and book sales in my financial spreadsheet, I’m writing this post. There may be a nap in my future. I had a great time at the fest. I’ve already bought my table spaces for 2019. Put it on your calendar now but make note, because of legal issues over the word, “comicon” they’ve changed the name to Phoenix Fan Fusion so look for that on-line.

2018 Planner

What are my writing tasks? I have to write a flash fiction story for Friday’s post. I need to continue to clean up my newsletter email list. I need to finish formatting the ebook version of my Gulliver Station book bundle. I need to get the poems I wrote in April, formatted and edited and put into a slim volume. I need to rewrite Mystery at the Reunion. My Jean Hays series fans are begging for the next book. I need to finalize my contest for renaming my serial Slave Elf and get that edited and out of the door. I have a few scifi stories picked from my flash fiction collection that I need to sort, re-edit, and put out as a collection. I’ll probably call it Science Fiction Tales, to go with my Christmas Tales and Halloween Tales books. There’s a lot more but I’ll leave it at that.

A few tables away was Tom Leveen, www.tomleveen.com. Both were really great guys—friendly and personable. I invited both of them to my 2019 Payson Book Festival. We’ll see how things work out.

I apologize for the lack of posts. March and April were extremely crazy for me but I didn’t forget about you. April saw me take an actual vacation, to see my daughter in southern California. We enjoyed the beach (cold!) and Solvang, CA, (hot!), and my daughter’s and her room mate’s new house. It’s small, but the back yard has producing fruit trees. One was a Meyer lemon, the lemons ripe and ready to pick. So of course, I brought home five of them. What else could I do but make a dessert?

I’m still sticking to my Paleo life-style. Whatever your eating style, there’s nothing wrong with whole, fresh food, especially straight from the tree! Fair warning, because of the coconut oil and milk, this isn’t low fat but it is “good” fat. Enjoy in moderation. It makes four 8oz, ramekins of dessert.

Paleo Lemon Curd

Sauce Pot

Strainer

Measuring cups and spoons

Zester or Micro-plane

 

Ingredients

1/2 cup juice: 5 Meyer Lemons (6 or more regular lemons depending on how juicy they are.)

1 T Lemon zest

3 eggs (whole)

1/4 C Honey

6 T Coconut Oil

Yellowstone Arrival: Flash Fiction Friday Post

In June of 2017, my husband and I traveled up to Yellowstone National Park to visit a friend and see the sights. This describes the entrance to the park.

A Bison studies us as we pass by on the entrance to the park. A Bison is the size of a sedan.

We left the sun-baked desert and entered a world of green.

Flat and green, it seemed to run forever.

Crops and houses and schools.

Tame.

Safe.

It was a surprise when we entered the tunnel.

It ran for miles.

Lodgepole pines small and great.

Once in a while they opened and before us ran rivers and meadows,

dotted with great hulking brown shaggy behemoths,

placid in the impermanent sunshine.

Wild.

Dangerous.

Boiling mud, steaming water, birds and fish, elk and bison, cliffs and meadows, rivers and streams.

Our hearts beat quicker.

This is where we’re meant to be.

Not hemmed in.

Not scheduled by mere clocks, but by the sun and moon.

I take my meeting on a wind-blown hilltop,

The earth spread below me in a cloud-dappled wonder,

The way the first human saw it.

It is good.
