Happy President’s Day. The holiday kind of caught me by surprise. We went to breakfast Saturday morning and the town traffic was heavier than usual. I couldn’t understand why till I happened to check the calendar. So. Hope you are having a great three day weekend and staying safe, as well.

Anyone reading this also on Facebook? Sometimes a meme comes through that just sticks with me. A few weeks ago was one that read: Hardest thing about adulting? Deciding what to make for dinner every night for the rest of your life. I so understand that. I didn’t when I was younger. I loved buying cookbooks, trying new recipes—now, if I can’t make it from memory or requires more than one pan, I’m out. So for those of you still enthusiastic about dinner, yay! For me, I’m still struggling along.

The weather here has been getting warmer. The rose bushes and fruit trees are starting to bud. That means I’m late at pruning. So to all of you gardeners out there, time to prune!

Elk Ate My Tree

 

Newest News:

Last week I managed to get more of the garden planted. I did not get my peas and bean seeds planted but I did go to the plant sale held by the local garden clubs. There I picked up a couple of tomato plans, zucchini, cucumber, sage and cantaloupe. Those are now nestled nicely in their spots in the raised beds. All of the fruit trees are doing well except the apple tree. That tree is in my front yard, unfenced. Thursday, I looked out of my window and saw during the night an elk had come by and had eaten just about every leaf and every fruit bud from the tree. That’s the picture, above. I was heart-broken. I have friends here who have apple trees and I can get apples from them. It’s just that now the tree looks so sad.

Finished Lemon Whip

I’m still working on It’s All About the Music. I didn’t get it done during April as I had planned. That’s all right. I’ll get it done this month. I hope. I still need to make part of my costume for Phoenix Comic Fest, so that’s going to eat into my time.

I live in Arizona so it’s grilling time just about all of the time. But even for the coldest places, you can grill well into the fall. I thought ribs and potatoes would be nice. Even better, the potatoes can be done on the grill, too! I went one better and used the last of my peaches to make the BBQ Sauce. Yummy.

Gluten Free Meatloaf

I love meatloaf. It’s a perfect winter dinner. The oven heats up the house, the smell of baking meatloaf permeates the air, what could be better? I usually serve mine with mashed potatoes and green beans but we had green beans a couple of nights ago so I plated up broccoli instead. It’s all good.

I made my own tomato sauce for the top, used veggies I had on hand to put in the meatloaf, and used gluten free bread and cereal crumbs for the mix. You can make this a paleo meatloaf by using paleo bread or by leaving out the bread all together.
