Took Mom out to lunch yesterday to my fav diner.

Three hours later, I’m in the bathroom. Yep, they gluten’d me. It’s a place owned by people with celiac so since it’s opening, has been a favorite spot of mine. But not yesterday. Nope.

Mom is settling in. Yesterday, after lunch, we checked out the local senior center for their programs. Still have to do lots of other “moving” tasks, but one thing at a time.

I meant to post my blog titled Life Tips: https://wp.me/p6LAko-1bu, for Sunday, but somehow or other posted it Friday, with another post. No idea why I did that but there it is. Then on Saturday, I wrote and posted my monthly Chicklets in the Kitchen blog, this month on three ingredient coconut yogurt. You can check that out at: https://wp.me/p6LAko-1bz. All of that to say, I thought I wouldn’t have to write another post for Sunday, but nope. Had to write a new one on Saturday. Good thing, I cranked out words on Saturday! LOL!

The Northern Gila County Fair (Sep 6 – 8) set up is in one week. As the Director for the Exhibits (non-livestock), I start working on Tuesday, September 4th. By Thursday, when the fair opens at 5pm, I’m already exhausted. By Saturday at 9pm when the Exhibits tent closes, I’m done but still, have to show up Sunday so exhibitors can pick up their exhibits. Don’t get me wrong. I love the fair. So many people have great talents in so many areas and I certainly hope that if a visitor sees something they are interested in, they’ll contact that exhibitor or the hobby group to get involved and learn more. This week I’ll be finishing the Gulliver Box set. Sunday I finished formatting the edited version for Amazon. This week will be getting the new one up on Amazon and on Smashwords (https://www.smashwords.com/profile/view/conniecockrell) then formatting the paperback version and getting it up on Createspace. Awesome! Done just before the fair. After the fair I’m editing Slave Elf and putting my new covers on the Brown Rain books. Also changing the interior files to add cute little graphics to the beginning of each chapter. That particular project should go quickly as the books are short. Wish me luck!

Three Ingredient Coconut Yogurt: Chicklets in the Kitchen Blog Post

 

Home grown peaches with homemade coconut yogurt

I have to say, the last three to four weeks I’ve pretty much blown off doing my paleo lifestyle. I re-introduced grains in the form of gluten-free bread and pizza crust, have been eating ice cream with homemade chocolate shell, and even gotten into the Reese’s Peanut Butter cups. (Peanuts are a no-no on paleo, not to mention the sugar.) Sigh.

Then I’m also stressed about the upcoming Northern Gila County Fair. I’ve introduced on-line exhibit registration and from what I can tell, it’s not being used. That means it’s going to be a lot of hands-on exhibit registration again this year. But I’ll have to input all of that hand-written stuff again, manually, into the fair database. Another sigh.

Anyway, this month I decided to do a video about this three-ingredient coconut yogurt. You can see from my face the result of eating the grains and dairy and sugar. Ugh. Back on the paleo I go. In the meantime, though, I’ll have lots of this delish yogurt to help me stay on my path. Clear skin, here I come.

 

Three Ingredient Coconut Yogurt

Hardware

Saucepan

Large Pot

2 Quart Measuring cup

1 Cup Measuring cup

3 One-pint canning jars

Tongs

Rubber Spatula

 

Ingredients

1 T/1 package unflavored gelatin

3 Cans (40.5 fluid ounces) coconut milk

4 capsules live probiotic (The more strains of probiotic the better. I used Solaray, mycrobiome probiotic, 30 billion live cultures, 24 strains. Live probiotics are kept in the refrigerated section of your local health food store.)

1/2 cup water

NOTE: You’ll notice that aside from canning jars, I don’t use any equipment you don’t already have in your kitchen. Canning jars are generally available by the dozen in your local hardware stores, but I know I can also find them in the local thrift shops. ALWAYS use new canning jar lids (the flat part with the thin rubber circled edge.) This is essential to making sure you get a good seal on the canning jar. (This is less critical for the yogurt.) If you’re canning fruit or vegetables or jam/jelly, you have to get a good seal to keep the food safe. The rings that hold the lids are reusable.

Enjoy that fresh tangy flavor. In addition to having it as a snack or breakfast with fruit and nuts, you can also use your yogurt in homemade salad dressings, in place of some of the mayo in your macaroni or tuna salads, as part of your pancake toppings and so much more.

Hi Mom: Daily Blog Post

Hey!

Monday called my mom. My brother Tom took a picture of my Mom for me and sent it on Facebook Messenger. I could download it and save it, so I can share it with you.

Monday was also watering day. Front yard flowers and back yard vegetables. I picked a lot of cherry tomatoes, a zucchini, and a lemon cucumber. Plenty of veggies for today’s lunch and supper!

I made white potatoes in my air fryer on Sunday. They came out nice but I kind of like the butter on my pan-fried potatoes. Hubby is still experimenting with various fried mushroom recipes. His favorite so far is one with Italian flavored bread crumbs. Do you have an air fryer? What’s your favorite recipe for it?

It’s a quiet day here. Am soaking my stove burners in ammonia to rid them of burned on gas black stuff. I found the tip on Pinterest and thought I’d give it a try. Do you Pinterest? I’m at https://www.pinterest.com/conniecockrell/ if you’d like to follow me.

Finally figured out why the coconut yogurt I made came out thin. HA! I forgot to put the gelatin in it. Duh! I had the printed recipe right in front of me and totally forgot to put any in. Silly me. The batch tastes good, it’s just not thick like the regular greek yogurt I like. Next time.

Friday’s Fun: Daily Blog Post

Hey!

Friday is a bit of a fun day for hubby and me. Our local casino offers a Veteran’s Promo on Friday mornings and we go down there for that. We meet up with a couple other of our friends, gamble a little until we meet the required point goal, go get our casino cards updated, get a free $5 comp that covers our breakfasts, then go back to gamble the $10 in casino dollars they give up.

We spend more time at breakfast than gambling but that’s all right with me. Friday morning I won $5 and hubby won $15. Free money, free breakfast and a meet-up with friends. A good start to the day, I say.

Also yesterday, when I returned home, I processed more peaches into peach puree for smoothies (or those bellini’s I mentioned a few days ago.) I still have more peaches in the fridge and have given up getting the last of the peaches from the tree. I can’t reach them and by now they’re too ripe to pick. Let the birds and the bees have them.

Then I wrote this blog, and will continue to edit my Gulliver Station series. I’ll have to be done with this box set sooner or later. Sooner, I hope.

Peaches!: Daily Blog Post

Frozen peach slices

Hey!

So I mentioned in Monday’s post that I have an abundance of peaches. Monday morning I made cobbler, which used up 4 cups of chopped peaches. I had some of that for breakfast, yum!

I turned three other containers of peaches into sliced peaches and put them in the freezer. If you also have an abundance of peaches, here’s what to do. Quickly blanch your whole, ripe peaches, about 2 minutes. Drop them into ice water to stop the cooking. Then with a paring knife, peel each peach. If your peaches are truly ripe, the skin will slip right off. If your peaches aren’t fully ripe, you’ll have to actually peel them. Take care to just take the skin and as little of the peach flesh as humanly possible. Then half, pit, and cut into slices. Put them on a freezer-paper lined cookie sheet or sheets, in my case, and put in the freezer. I usually let mine freeze at least 24 hours. Longer if I get busy. Anyway, take from the freezer, loosen from the freezer paper, and put into gallon freezer bags.

Gulliver Box set, New Ice Cream Maker, Gardening: Monday Blog Post

So, I have the Smashwords copy of the Gulliver Station Box set formatted and the table of contents linked. I’m going to go through it today to try and get rid of the punctuation and grammar errors I see in there so when I do the paperback version, it will be cleaner. I’ll update the Kindle copy as well. It’s a tedious process, folks, so please bear with me.

Ice Cream Maker

I mentioned a few of days ago that I was buying a new ice cream maker because I couldn’t find the motor and paddle for my old one. Well, the Cuisine Art maker came, and Saturday I made a new batch of vanilla paleo ice cream. I put it into the maker and it worked beautifully. Hubby tried it Saturday night and while he declared it wasn’t as creamy as regular ice cream, it was good. Better with the addition of fresh, cut-up peaches, of which we’re swimming. That’s a whole ‘nother story.

The garden is going strong. I have peaches. Lots and lots of peaches and they all ripen at once. So we give away a lot to friends. The a good many I’ll blanch, peel, and cut into slices to freeze. The freezing part is easy. Lay the slices out on a freezer paper lined baking sheet and put in the freezer. The next day, loosen them from the paper, put into a gallon freezer bag, and you’re done. Unless of course, like me, you have several more containers of fresh peaches in the fridge. Then it’s round two! The picture is of 2 containers already washed, and my gathering basket of just picked peaches, before they get their bath.

Ice Cream, Concert in the Park: Daily Blog Post

Potato Lake

Hey!

So hubby took a handful of hikers on a non-standard day hike today, meaning, we don’t usually do Saturday hikes. However, a hiking friend of ours from Phoenix heard about our Tuesday hike to Potato Lake and wanted to see it. So, he arranged a hike. I didn’t go. I was just there Tuesday and besides, there were things I wanted to do. This blog included.

Anyway, among talking to one of my brothers back east, going to the Farmer’s Market, and watering the garden, I decided to make a paleo ice cream. The base is sitting in the refrigerator right now. Why isn’t it churned and in the freezer? Because while the base of the ice cream maker is in the freezer, where it belongs, I cannot find the paddle or the motor part. Hubby and I have looked everywhere. Even places it shouldn’t be. No motor. No ice cream. Sigh. I can hold the liquid base and go to the store and buy a new ice cream maker, but I’ll have to let that base freeze for 24 hours. No ice cream for me tonight.

Also today is the last concert in the park. The town’s Park and Rec department puts on this concert series every summer and this is the last one for the season. It’s a good band, too, so I don’t want to miss it.

Raspberry Coconut Panna Cotta: A Chicklets in the Kitchen Blog Post

Raspberry Coconut Panna Cotta

It’s summer. It’s hot. The last thing you want to do is start the oven up. The first thing you want is something cool, smooth, slightly sweet, and refreshing. I’ve found just the thing over on www.healingfamilyeats.com/raspberry-coconut-panna-cotta/. As soon as I saw that delightfully pink, creamy-looking dessert, I just had to try it.

Unfortunately, I didn’t have any raspberries. I did have frozen blueberries though, so that’s what I used. This recipe is easy, and has just five ingredients, probably already in your fridge, freezer or pantry. And it makes 8 servings! Yay!

This being a paleo recipe, we’re not using the usual panna cotta ingredients or methods but that’s just fine with me. Give it a try. Click here for the full post.
