Sweet and Sticky Orange Ginger Wings

A big, Happy New Year, to everyone. If you’re like most people you are now 25 days into whatever diet you decided to do after the excesses of the holiday season. I have renewed my plan to eat paleo but also, it’s near the end of the month and the Super Bowl is coming so I was looking around for something I could make or serve, that didn’t seem like diet food.

These wings really hit the spot. As the title suggests, they’re sweet and sticky with just a hint of heat from the ginger, so perfect for kids as well as adults. This recipe is already Auto Immune Protocol (AIP) ready but I changed some things up to make it paleo as well.

Sweet and Sticky Orange Ginger Wings serves 4 – 6

Hardware

Cutting Board

Medium Mixing Bowl

1 cookie sheet

1 – 2 wire racks (like for cooling cookies)

Small saucepan

Zester

Large Knife

1 Cup Measuring cup

Measuring Spoons

Large Spoon

Ingredients

For the Chicken Wings

2 lbs of chicken wings, thawed (I used a bag of wings from Walmart which was 4 pounds, so double what this recipe makes.)

2 Tablespoons arrowroot starch (Optional)

1 teaspoon garlic powder

1 teaspoon powdered ginger

½ teaspoon sea salt

For the Orange Ginger Garlic Sauce

¾ cup orange juice (use whatever you have but here in Arizona it’s orange season and I was able to juice some lovely totally ripe oranges from a friend’s tree. It took about 4 oranges.)

½ cup coconut aminos (a substitute is soy sauce, but if you’re going for gluten free, use the gluten free kind.)

¼ cup apricot preserves (again, to keep it paleo and gluten free I made my own by finely chopping dried apricots, covering with water, and simmering until the water was just about gone. The result isn’t really jam, but the liquid is thick and sticky and acts enough like the preserves to use as a substitute. No sugar or honey needed, the fruit is plenty sweet enough.)

1 Tablespoon minced garlic

1 teaspoon orange zest (removed from one of the oranges before juicing. It will need the whole orange.)

1 teaspoon grated ginger

1 teaspoon powdered ginger

1 teaspoon garlic powder

1 teaspoon raw honey

½ teaspoon sea salt

1 teaspoon arrowroot starch, to thicken

¼ cup chopped scallions, plus extra for garnish

Directions:

Preheat oven to 400F degrees. Grease a wire, oven-safe rack and place it over a baking sheet.

Put chicken wings on a plate and dry with a paper towel.

Mix together arrowroot starch, ginger, garlic, and sea salt and lightly dust the chicken wings. Toss to coat. Place wings in a single layer on wire rack.

Bake wings for 45 minutes, or until cooked through. I flipped my wings once part way through cooking. Turn oven broiler on and broil for 5 more minutes, until skin is crispy.

While wings are baking, whisk sauce ingredients together (except for arrowroot and scallions) in a saucepan and ring to a low boil over medium heat.

Turn down to low and simmer sauce for 8 – 10 minutes, then whisk in the arrowroot starch and allow to thicken for an additional 1 – 2 minutes. Remove from heat and stir in scallions.

In a bowl, toss baked wings in the orange sauce and top with extra chopped scallions. Note: I thought only half of the sauce was needed. I stored the rest for later use.

It’s a lot of steps but each one is very easy. Enjoy!

I spent a lot of time this last week working on the Payson Book Festival and the Northern Gila County Fair. For the book festival, I completed the grant application and sent it in then talked with the director of the grant and received some tips on tweaking the grant application. I did that and sent it back. Authors are signing up for the book festival like gang-busters. I feel certain that the new on-line application and PayPal credit card process is making it so much easier for authors to sign up. I know I enjoyed it when I put my application in. For the fair, I contacted a local new shop owner that sells bath and body stuff made by local artisans. It’s a lovely little shop and she agreed to work with me to set up criteria for judging homemade soaps, lotions and other things in our fair’s Homemaking Arts department. I’m looking forward to seeing what our local crafters are doing in this area.

Hubby and I spent the day at home on Sunday and watched the Super Bowl with just the two of us. We had snacks and while hubby was interested in the game, I was more interested in the commercials. That didn’t stop us from picking opposite sides with him cheering on Atlanta and me the Patriots. It’s hardly any fun if there’s no opposition, right?

I broke down and bought two foot-torture devices. They have a hard plastic top that goes on top of the foot. Then there are straps to Velcro around the leg above the ankle and then around the ball of the foot to keep your foot in a 45-degree positon. I use one on each foot and sleep with them on my feet. You’re right, they catch in the blankets and wake me up when I turn in my sleep. On the other hand, after three nights using them, my feet do feel better. I’ll keep using them then try another walk at the end of the week. I’m missing out on great hiking and want to get back to it. Keep your fingers crossed for me.

Good progress was made on Mystery at the Book Festival. I finished my paper edits and have started on the research edits. Those are places in the manuscript where I need to do more research on what a real police department or ambulance drivers would do. There are the notes, also, where I realized I changed names in the middle of the book, mention something from book 1 that I need to look up to be sure I have the details right, and spots where I mention the characters saying they’d do something but I have to make sure it happened or at least is mentioned again to tie up all of the loose ends and questions I brought up. It’s a lot of detail to keep straight but I don’t want to send it to my editor with a bunch of stupid errors in it.

Superbowl! Did you watch? My hubby and I were invited to a friend’s house to watch. She is a die-hard Bronco’s fan and I had my fingers crossed for her. I’m not a big football fan so I was really there to watch the great commercials. There were some great ones though I was disappointed that Budweiser didn’t use the Clydesdales this year. Which was your favorite?

Kindred Spirits is back with the editor. I had to do some re-writing and of course corrected all of the errors my editor found the first time around. Apparently I am never going to learn when to use an m-dash or an ellipse. I have improved on putting the hyphen into hyphenated words. I’m still looking for people interested in receiving an Advance Reader Copy (ARC) for a review. If you’d like to be an ARC reader and do a review for me, let me know. You do not have to have read the first two books of the series to enjoy the third book. I may have it whipped into shape by the end of January for a February release. So if you’d like an advance copy, let me know today! Time is running out for an advanced ‘look see’ at the third book, and if I may say, the best book, in the series. You’ll want to get this in advance of your friends.

Over the week I booked my hotel room for the Phoenix-Scottsdale MysteryCon (http://www.azmysterycon.com/) that will be held on June 3rd and 4th. I’m so looking forward to that and the entry fee is pretty reasonable. If you’re a mystery reader, I think you’ll enjoy the conference. I hope to see your there!

The weather here in central Arizona is warming up. If you remember from last summer, I was trying to eradicate mint from my deep garden bed by not watering it. I went out on Saturday and looked at my beds. The darned mint is growing again. I’ll continue to try and dig it out but the wet winter here isn’t helping me kill it. Also my daffodils are poking up through the remnants of snow. Spring is coming!
